BASIC MARINARA SAUCE

This basic and simple sauce using red plum (Roma) tomatoes and fresh green basil combined, creates an aroma that will perfume your kitchen. The sauce can be prepared quickly, using 2 main basic ingredients to spoon over or mix into the pasta of your choice. These few fresh flavorful ingredients will naturally highlight the mild earthy taste of pasta.

3 tbl. extra virgin olive oil
1 small onion-finely chopped
2 cloves pressed garlic
1 jar of pure plum whole
   tomatoes or 1 can of plum
   tomatoes (blenderized)
2 tbl. fresh basil finely        
   chopped
1/2 tsp. salt
1 dry red pepper or red pepper flakes (optional)
cheese (pecorino Romano - optional)
pasta - spaghetti or your choice
(finely chopped fresh flat Italian parsley - optional)

In a deep saucepan, add olive oil, minced garlic, salt until onions are translucent, then add your pureed tomatoes. Add your fresh leaf parsley and basil (finely chopped) and cook for approximately 20-25 minutes.

Prepare your favorite pasta and add your sauce. Garnish with cheese (optional).
