Steamed Turbo with Garden Vegetables

White, tender fresh turbo steamed in a red rich tomato puree sauce steamed with baby peas, string beans and capers. Light, healthy, appetizing and tasty.

Tips: You can use either fresh or frozen peas. For a
variation, you can serve over a bed of white or brown rice.

Servings: 4-6                                      Time: 25 minutes

Ingredients:

4 fresh Turbo filets
16 oz. of puree tomatoes
3 cloves of garlic (pressed)
1/4 lb. fresh string beans
1 10 oz. frozen peas
1 tbl. of fresh capers
1/4 cup of white wine (or homemade wine)
1/4 tsp. of imported dry oregano

Preparing the Vegetables

Precook the frozen peas for 15 minutes and drain. Rinse, trim and cut the string beans in half and set aside.

Steaming the Turbo

In a large skillet, add 1/4 cup of extra virgin olive oil, pressed garlic and heat. Add the tomato puree, salt, string beans and cook for 10-12 minutes. Add the Turbo filets, baby peas, capers, white wine and steam for additional 10-12 minutes.

Serve hot.
