STUFFED PORK TENDERLOIN
with PORCINI MUSHROOMS

Butterfly - Stuff - and Grill

1 clove garlic - finely chopped
2 tbl. extra virgin olive oil
½ cup of dried porcini mushrooms
1 tbl. grated pecorino romano cheese
3 leaves coarsely chopped basil
3 stems of Italian flat parsley - coarsely chopped
½ tsp. salt
½ tsp. pepper

Seasoning Pork Tenderloin


Lay flat the tenderloin on a clean work surface. Add finely chopped garlic, 2 tbl. of extra virgin olive oil, and sautéed porcini mushrooms, 1 tbl. grated pecorino romano cheese and coarsely chopped basil and parsley, salt and pepper to taste.

Roll tenderloin from the bottom end up - into cannoli form and tie with twine. Grill on all sides for approximately 20-22 minutes. Splash with homemade wine 3-4 minutes before completed cooking time.

Slice and serve hot.
