ELEANORA'S TIPS: CIPOLLINI

Cipollini are rare bitter onions sold in specialty stores or markets. Price can range from 4.99 to 6.99 per pound


When choosing cipollini, look for those that are slightly larger, with no signs of decay or mildew. The outer skins should be pinkish-coral, and the tips should be intact. The bottom of the cipollini should have absolutely no signs of aging or spotting. They should feel heavy in weight. If they're light in weight, they're not fresh enough. Also, if you see a white stem-a sprout--emerging from the tip, the cipollini are not as fresh as they should be they can still be used. As cipollini age, each outer skin will start to shed. Fresh cipollini have tight skins.
