UNDERSTANDING FLAVORS
Italians love to eat and live for food. We look forward to each and every meal with excitement and pleasure. We understand flavors because we grew up eating homemade meals every day. That makes it very easy to recognize authentic Italian food as opposed to that which is prepared with many preservatives and unnatural ingredients. As a child, I was very observant and always took a great interest in food. That was simply because I had a very hearty and healthy appetite. I found nothing more pleasurable than the aroma of a pot cooking with fresh tomatoes and perfumed basil, a scent that would make anyone hungry. There is a definite misconception that having a lot of ingredients will make your recipe successful. I believe that too many ingredients will confuse or difuse the flavors of your dish. In my opinion, simplicity is the key to great cooking. Preparing a recipe with only one or two ingredients that have complimentary flavors, will work the best. © 2000 Eleanora's Kitchen.
