TALK ABOUT INGREDIENTS

My ingredients are common and easy to find in your local stores.

One key to good cooking is Quality. Not Quantity. Quantity means that a recipe calling for too many ingredients can complicate the  flavors.

You can make a delicious and fantastic recipe with 2 or 3 quality ingredients. For example: instead of using grated cheese found at your local supermarket, I ask that you buy fresh grated cheese at a specialty store.

Taking that bit of extra time to make a meal special is the trick to a great dish or recipe. Its those "little things" that make the difference, like seasoning your pasta with a sauce using roasted garlic or paste for added flavor. Sometimes, this will be the difference between an average meal and one that can't be beat.

FOLLOWING INSTRUCTIONS

My cooking instructions don’t have to be followed to the "T". Exact preciseness is not the key to good cooking, if you add a little more of this or a little less of that – don’t lose sleep over it. Your recipe will still come out great. As a matter of fact, I have never used measuring tools, until recently, and that is only because I needed to calculate the exact measurements for clarity of these recipes.

TOOLS

The only tools you will need for my type of cooking are the ones you already have. None of my recipes call for rare or expensive cookware or special tools.
